Welcome to my first blog post! I am so excited to be writing this right now, and even more excited knowing that YOU are finally reading it! I am Ingrid Vidalon, creator of Green Heart Chef. I have been wanting to blog about my health journey, using food as medicine, wellness, and everything that I have learned in the last ten years for a while now... I am thrilled that I am finally starting!!! For my first blog post, I wanted to let you know more about me and what you can expect to see here!
Let me introduce myself… a little about me
I was born and raised in the beautiful country of Peru and lived there until my early thirties when I moved to the United States. I am a trained pastry chef and have been passionate about food since I was a little girl. I have been a restaurant manager, I have owned a bakery, and have worked as a pastry chef for many years, both in Peru and the US. In 2014, due to my own health struggles, I decided to change the direction of my career as a chef. I decided that I no longer wanted to feed people foods that were not nourishing (think white flour and sugar). It was then that I started changing my diet to more nourishing foods, ditched the gluten and processed foods, and started working at places where I had the opportunity to create delicious foods that also happened to be good for you, AND I L.O.V.E.D IT!!!
Through the years I have learned more and more about healthy diets, therapeutic diets, different types of cuisines, superfoods, and more. All this came in really handy when I became very sick with what at the time seemed like a "mysterious illness". I became intolerant to many foods overnight; I actually just could eat about 15 foods that were safe. Anyway, to make a long story short, thanks to my training as a chef and my love of good food, I was able to create delicious recipes with my 15 safe ingredients lol! Slowly as I started to heal I was able to introduce more foods and my repertoire of recipes grew... I was sooooo excited every time I could add something new to my list of safe foods!!! Now I am able to eat a lot more foods; however I am currently following the GAPS diet, so you will probably read a lot about that.
Another thing that I had wanted to do for many years (just like blogging), was to become a holistic nutritionist, and after my health crisis in 2018, I did! I am as passionate about nutrition as I am about eating tasty food. My boyfriend calls me "the healthy hedonist" lol. I have experienced the healing power of foods in my journey and also with clients. Each day I am more in awe and grateful, because I realize our Creator has not made us powerless, but has given us many tools to keep ourselves healthy and to recover from "dis-ease".
What this blog is all about…
As you can see, I LOVE food. I also LOVE traveling, living in harmony with nature, and learning about the science behind nutrition and wellbeing. I like to share this knowledge with people, so they can take their health and wellbeing into their own hands. So... on this blog, you will find articles about everything that has helped me on my healing journey, along with recipes, and more!
